3 Healthy Recipes to Help You Lose Weight

1. Grilled Chicken and Vegetable Skewers

  • 1 lb. boneless, skinless chicken breasts
  • 1 red bell pepper, chopped into bite-sized pieces
  • 1 yellow squash, chopped into bite-sized pieces
  • 1 zucchini, chopped into bite-sized pieces
  • 1 red onion, chopped into bite-sized pieces
  • 2 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • 1 tsp. dried basil
  • Salt and pepper, to taste

Preheat grill to medium-high heat. Cut chicken into bite-sized pieces and thread onto skewers, alternating with vegetables. In a small bowl, whisk together olive oil, balsamic vinegar, dried basil, salt, and pepper. Brush the mixture onto the skewers. Grill for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.

2. Turkey and Quinoa Stuffed Peppers

  • 4 bell peppers
  • 1 lb. ground turkey
  • 1 cup cooked quinoa
  • 1 can diced tomatoes
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano
  • Salt and pepper, to taste

Preheat oven to 375°F. Cut off the tops of the bell peppers and remove the seeds and membranes. In a large skillet, heat olive oil over medium-high heat. Add ground turkey and cook until browned, breaking it up into small pieces with a wooden spoon. Add onion, celery, and carrots and cook until vegetables are tender. Stir in cooked quinoa, diced tomatoes, garlic powder, oregano, salt, and pepper. Spoon the mixture into the bell peppers and place in a baking dish. Bake for 25-30 minutes, until the peppers are tender.

3. Berry and Yogurt Parfait

  • 1 cup plain Greek yogurt
  • 1 cup mixed berries (such as strawberries, blueberries, and raspberries)
  • 1/4 cup granola
  • 1 tbsp. honey

In a glass or bowl, layer yogurt, mixed berries, and granola. Drizzle honey on top. Serve immediately.
